Summertime Shrimp

2 lb. small-medium shrimp
1 tbs. Old Bay seasoning
1 tsp. chopped garlic
2-12 oz. Cans of beer
1 celery rib

1 cup mayonnaise
1/2 tsp. garlic, finely minced
1 hard-cooked egg, chopped finely
2 tsp. Dijon mustard
1 tsp. capers, chopped
1 tsp. tarragon (dried)
1 tsp. parsley (fresh dried)
1/2 tsp. anchovy paste (optional)
1 1/2 tbs. wine vinegar
1 tbs. minced scallions
1/2 tsp. horseradish

Mix Old Bay seasoning, garlic, beer, and celery rib prior to cooking shrimp. Simmer shrimps in mixture about 5 minutes or until pink, but not tightly curled. Let cool and remove shell. Stir into sauce and chill at least one hour prior to serving.
